A classic recipe for Salade Niçoise:
Ingredients:
For the salad:
- 4 cups mixed salad greens (lettuce, arugula, or spinach)
- 1 cup cherry tomatoes, halved
- 1 cup boiled and sliced new potatoes
- 1 cup cooked green beans, trimmed and halved
- 1/2 cup black olives (Niçoise olives if available)
- 4 hard-boiled eggs, halved
- 1 (7 oz) can tuna, drained
- 2-3 anchovy fillets (optional)
- Fresh parsley for garnish
For the dressing:
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions:
1. In a large salad bowl, arrange the mixed salad greens as the base.
2. Add the halved cherry tomatoes, sliced boiled potatoes, and cooked green beans on top of the greens.
3. Sprinkle the black olives over the salad.
4. Arrange the halved hard-boiled eggs and canned tuna on the salad.
5. If using anchovy fillets, place them strategically on the salad.
6. For the dressing, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper in a small bowl until well combined.
7. Drizzle the dressing over the salad, and gently toss all the ingredients together to coat them with the dressing.
8. Garnish the salad with fresh parsley.
9. Serve the Salade Niçoise immediately and enjoy!
Note: Feel free to customize the salad by adding or omitting ingredients based on your preferences. Traditional Salade Niçoise often includes other ingredients like capers, red onion slices, or even artichoke hearts. The anchovy fillets are optional, as some people may not prefer their strong flavor.
