A delicious and slightly unique zucchini bread recipe

Chocolate Chip Zucchini Bread with a Twist

Ingredients:
- 2 cups grated zucchini (about 2 medium zucchinis)
- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
- 1/2 cup chopped nuts (walnuts or pecans), optional
- 1/2 cup dried cranberries or raisins, optional

Instructions:
1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

2. Place the grated zucchini in a sieve or colander over a bowl to drain excess moisture while you prepare the rest of the ingredients.

3. In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg.

4. In another bowl, beat the granulated sugar, brown sugar, and vegetable oil until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

5. Squeeze out any excess moisture from the grated zucchini and fold it into the wet ingredients.

6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

7. Gently fold in the chocolate chips, chopped nuts, and dried cranberries or raisins, if using.

8. Pour the batter into the prepared loaf pan and smooth the top.

9. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the bread is browning too quickly, you can tent it with aluminum foil during the last 15 minutes of baking.

10. Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer the bread to a wire rack to cool completely.

11. Slice and enjoy! This zucchini bread is delicious on its own or spread with a bit of butter or cream cheese.

 

Feel free to get creative and add other mix-ins like shredded coconut, dried fruits, or even a sprinkle of flaxseeds for extra nutrition.
